You can either soak the raw cashews for 2 hours OR what I do is place the raw cashews in a cup of water and microwave for 4 minutes. Let the cashews sit and cool before using.
Once the cashews have cooled, place them in a food processor and pulse a few times.
Add all the remaining ingredients and blend in the food processor until smooth (about 5 minutes).
You can adjust the amount of water as needed. The dressing will thicken in the refrigerator and you can always add a little more later.
Place in a container and refrigerate for at least one hour before serving.
Romaine Lettuce
Wash your lettuce thoroughly before using. Tear (don't cut - are we barbaric?) your lettuce into small pieces.
Seasoned Croutons
Cubed the Italian loaf into cubes (whatever size crouton you like)
Combine in a bowl all the dry spice ingredients
Place the cubed bread in a bowl and drizzle the olive oil over the cubes. Be sure to stir the cubes around to get an even coating.
Sprinkle the dried seasoning on the cubes. Be sure to stir the cubes around to get an even coating.
Take a baking sheet and place the cubes evenly on the sheet
Bake in the over at 375 until golden brown. Approx. 15 minutes or until brown and crunchy.
Notes
This recipe creates a big, bold flavor. You can tinker with the amount of garlic and pickles to get the flavor to your liking. Add some fresh ground pepper to the salad before serving and prepared to be AMAZED!
