Ingredients
1/2MediumOnionDiced
1/2MediumGreen PepperDiced
1/2MediumRed PepperDiced
3ClovesGarlicMinced
1CupUncooked green lentils
2 1/2CupsVeggie Broth
115 oz canTomato sauce
1 1/2TTomato paste
1/4t Cayenne pepper
2tDry Mustard
2TVegan Worcestershire sauce
2TSoy Sauce
1TApple cider vinegar
1TBrown sugar
1/2 tSmoked Paprika
1/2tLiquid Smoke
Salt and Pepper
Extra water as needed
Instructions
Add the uncooked lentils to the veggie broth in a pot. Bring to boil, reduce heat to a simmer and cover. Cook until the lentils are very soft. This could take 30 to 40 minutes. Stir occasionally and add some more water as needed.
In a pot, saute the onion, peppers and garlic until very soft and just starting to brown.
Add the tomato sauce and tomato paste to the veggies and stir to combine. Cook for 2 minutes.
Add all the other ingredients to the veggies and stir to combine. Cook for 2 minutes.
Once the lentils are good and soft, add to the veggies. It is ok if there is a little liquid left in the lentils, but not too much. Drain off any excess so your sloppy joe's are TOO sloppy!
Simmer for about 20 minutes. You can adjust to your taste....more tang add some more cider vinegar, more sweetness add more brown sugar or for more smokiness add more liquid smoke BUT be careful - a little liquid smoke goes a LONG way!

NOTE: Serve on a bun with pickles, sliced avocado's, onions (fried onions are awesome) or any condiment of your liking!
