In a small fry pan, add some olive oil and saute the onions, jalapeno and the garlic - just until soft. Remove and set aside.
In the same small fry pan, add some olive oil and roast the sunflower seeds until golden brown. Season with a little garlic salt and pepper. Remove and when cool, chop into small pieces.
Place the drained and rinsed black beans in a large bowl and mash well.
Add all the ingredients (with the exception of the bread crumbs and the corn meal) to the black beans. Mix well.
At this point you can taste the mixture and add more spices, salt and/or pepper to taste. You also want to make sure the consistency is right. You don't want the mixture too wet or your patties won't form well. The same if it is too dry. Depending on your mixture, you may need to add more oatmeal or aquafaba. Typically, I add more oatmeal.
Form your patties, thinner rather than thicker. Coat the patties with the bread crumb/corn meal mixture, place on a cookie sheet covered with wax paper and refrigerate for at least one hour.
Heat oil in a fry pan, place the patties in the hot oil and fry on each side for at least 4 minutes or until you get a nice crust on each side. Reduce heat and let slowly cook for a couple more minutes and serve.
