Ingredients

  • 1 Lb Collard Greens Cleaned and chopped
  • 4 Cloves Garlic Minced
  • 1 Onion Chopped
  • 2 T Olive Oil
  • 1 or 2 t Red Pepper Flakes How Spicy do you like it?
  • 3 Cups Veggie Broth
  • 1/2 t Liquid smoke
  • 6 Slices Vegan Bacon
  • Salt and lots of Pepper

Instructions

  • Thoroughly clean the collard greens.  If they are not pre-cleaned, they can be very sandy and gritty.  There are a lot of techniques on the internet for properly cleaning your greens.  Roll the large leaves and chop into strips.
  • In a large pot, add the onion and saute until softened.  Add the garlic and the red pepper flakes and continue to saute for a few more minutes.
  • Add the veggie broth and liquid smoke, mix well and then add your greens.
  • Bring the mixture to a boil, reduce heat, cover and simmer for at least 45 minutes.  You want the greens nice and tender.
  • Fry your bacon strips until nice and crispy.  Chop or crumble the bacon into smaller pieces and add to the pot.  I typically do this after the greens have begun to simmer, but you can add them anytime in the process.
  • Salt and pepper to taste.  Serve and ENJOY!

Notes

NOTE - You should always have a fair amount of liquid in the pot.  If it looks like you are simmering off too much liquid, just add some more veggie stock.
