Ingredients
1LbCollard GreensCleaned and chopped
4 ClovesGarlicMinced
1OnionChopped
2TOlive Oil
1 or 2tRed Pepper FlakesHow Spicy do you like it?
3CupsVeggie Broth
1/2tLiquid smoke
6 SlicesVegan Bacon
Salt and lots of Pepper
Instructions
Thoroughly clean the collard greens. If they are not pre-cleaned, they can be very sandy and gritty. There are a lot of techniques on the internet for properly cleaning your greens. Roll the large leaves and chop into strips.
In a large pot, add the onion and saute until softened. Add the garlic and the red pepper flakes and continue to saute for a few more minutes.
Add the veggie broth and liquid smoke, mix well and then add your greens.
Bring the mixture to a boil, reduce heat, cover and simmer for at least 45 minutes. You want the greens nice and tender.
Fry your bacon strips until nice and crispy. Chop or crumble the bacon into smaller pieces and add to the pot. I typically do this after the greens have begun to simmer, but you can add them anytime in the process.
Salt and pepper to taste. Serve and ENJOY!
Notes
NOTE - You should always have a fair amount of liquid in the pot. If it looks like you are simmering off too much liquid, just add some more veggie stock.
