Vegan Fish Sauce

I searched a lot of different recipes and found the combination of these ingredients were the easiest to find and developed a nice, rich flavor.

Ingredients

  • 1 1/2 Cup Water
  • 1/4 Cup Soy Sauce
  • 3 or 4 Dried Shiitake mushrooms
  • 1 Sheet Nori seaweed
  • 1/2 Sheet Kombu kelp
  • 2 Cloves Garlic Rough chopped
  • 1 Small Shallot Rough chopped
  • 1 t Tomato paste
  • 1 t White miso paste
  • Salt and pepper

Instructions

  • Add all the ingredients to a pot and bring to a boil.  Reduce heat to a simmer, cover and let cook for 30 minutes.
  • Strain the broth through cheese cloth (or a coffee filter could work) to get all the loose items out of the broth.
  • Store in a covered container in the fridge until ready to use.
