Vegan Gravy

- 2 T Vegan Butter
- 1 Sm Onion Diced
- 2 T Flour
- 2 to 3 Cloves Garlic Minced
- 2 T Corn Starch
- 1 1/2 Cup Veggie Stock
- 2 T Soy Sauce
- 2 T Nutritional Yeast
- Salt and lots of pepper
Saute the onion in the butter.
Add the flour and the garlic and continue to cook until the onion starts to brown. Turn the heat down and don't burn the garlic. Approx. 3 to 5 minutes.
Warm up the veggie stock and the corn starch together. Slowly add to the onion/garlic mixture and whisk until well incorporated. Bring to a boil, reduce heat and simmer to thicken. You can always add more corn starch if needed.
Add in the soy sauce, nutritional yeast, salt and plenty of black pepper. Use an immersion blender and blend until smooth. If you use a regular blender, Do NOT put hot gravy in the blender - you must cool it first.
Simmer for a few more minutes and serve.
