Vegan Grilled/Roasted Asparagas

Simple, great fresh asparagas recipe which pares well with burgers.

Ingredients

  • 1 Lb Fresh asparagas
  • 2 T Olive oil
  • Salt and Pepper
  • Vegan parmesan

Instructions

  • Preheat the oven to 425 or light the grill to high heat.
  • Wash and trim the ends of the asparagas.  Place the asparagas in a glass pyrex baking dish.
  • Drizzle the asparagas with the olive oil and salt and pepper.  I use quite a lot of salt and pepper.
  • If using the oven, place the pyrex baking dish in the oven and back for about 10 minutes.  You want the asparagas to start to brown, but still be crispy.  Nobody wants limp asparagas!
  • If grilling, use tongs and place the asparagas on the grill.  Grill for about 10 minutes, turning over to cook on each side.
  • Finish the asparagas with some grated vegan parmesan and Enjoy!
