Vegan Meatball Sub

This recipe is super easy and great for a Saturday night sub and beer night!  I usually serve with my Awesome Caesar Salad.

Ingredients

Vegan Red Sauce - see link to recipe below.

Subs

  • 1 Loaf French bread
  • 1 Green Pepper Sliced
  • 1 Sm Onion Sliced
  • 1 Pk Miyoko's Vegan Mozz
  • 1 Pk Gardein brand Meatless Meatballs
  • 1 Grated Vegan Parmesan

Instructions

Subs

  • Preheat the over to 425 degrees.
  • Cut the french loaf into 4 open face pieces (half long way, half across).  Drizzle each cut side with olive oil and sprinkle with garlic salt.  Place on a cookie sheet and put in the oven.  Your goal is to just let the tops of each piece start to brown.  Remove from oven.
  • Defrost the frozen meatballs.  I like to cut them in half - they will sit better on the sub!  Place a little olive oil in a frying pan and fry the meatballs until they start to brown.  The package says cook for 15 to 17 minutes, but we will also be cooking them in the oven, so I typically fry them for about 8 to 10 minutes.
  • Take the 4 french loaf pieces and start with a thin coating of the red sauce.  Then layer on the green pepper and onion.  Add the meatballs and cover the entire sub with more sauce.  Place some crumbled vegan mozz and vegan parm on top.
  • Place the subs back into the oven and bake for about 10 to 12 minutes or until the tops start to brown.  I also keep an eye on the bottom to make sure they don't start to burn.  Remove and serve!

Notes

NOTE:  You can add any other fresh veggies you like on your sub.
NOTE:  I am working on a recipe for my own homemade vegan meatballs.  I have the flavor profile right, but I just can't get the texture where I want it.  I try not to use premade or processed food, but these subs are so tasty and great in a pinch!
