Ingredients
3TOlive oil
1 1/2CupBrown RiceUncooked
3CupVeggie Stock
1 1/2CupFresh SpinachChopped
1/2CupCilantroChopped
1JalapenoSeeded and chopped
1ShallotDiced
3ClovesGarlicDiced
Salt and Pepper
Instructions
Place the spinach, cilantro, jalapeno, shallot, garlic, salt, pepper and 1/2 cup of veggie stock into a food processor. Blend until smooth.
Add the oil and the brown rice to a pot and cook the brown rice until it starts to sizzle.
Add the green puree to the brown rice, stir and mix well and cook for 2 minutes.
Pour in the remaining veggie stock, bring to a boil, reduce to a simmer, cover and cook until tender. Approx. 35 to 40 minutes. Check occasionally to see the liquid level. You can add more veggie stock as needed to get nice tender rice.
