Vegan Mexican Grilled Corn on the Cob

Vegan grilled corn that is unlike anything you have ever experienced!

Ingredients

  • 6 Ears Fresh sweet corn on the cob
  • 1/2 Cup Dairy Free Yogurt
  • 1/2 Cup Vegan Mayo
  • 1 T Sriracha sauce
  • 1 T Ancho chili powder
  • 2 t Cumin
  • 2 t Garlic Salt
  • 1 t Pepper
  • 2 Limes
  • 1 Bunch Fresh Cilantro
  • 1/2 Cup Grated Vegan Parmesan

Instructions

  • Shuck and clean the corn. Chop up the cilantro.
  • In a bowl, mix together the yogurt, mayo, sriracha, cumin, garlic salt and pepper.
  • On a baking sheet, evenly spread out the chopped cilantro and the grated parmesan. Over the top zest the limes. I usually add a little of the lime juice over the cilantro and parm as well.
  • Heat your grill to med-high.
  • Heavily coat the corn with the sauce and then roll in the cilantro, parm and lime. Place on a plate.
  • Place the corn on the grill and grill until nice and golden brown. Serve hot! ENJOY!
