Vegan Pasta Stir fry
This is a quick, fresh, healthy and really good dish. Fresh veggies, garlic and pasta - who needs anything else!

- 1 Box Spiral pasta (or any type of "meaty" pasta
- 2 to 3 T Olive oil
- 4 to 6 Cloves Garlic Minced
- 1 Small Onion Chopped
- 1 or 2 Zucchini Chopped
- 10 Spears Asparagus Chopped
- 4 Carrots Chopped
- 1 Large Handfull Snow peas Chopped
- 1 or 2 Fresh tomatoes Chopped
- 1/2 Cup Grated Vegan Parmesan
- Salt and Pepper
In a large pot, cook pasta per instructions to al dente.
In a wok or large fry pan, add the oil and the garlic. Saute the garlic until fragrant (about 2 minutes).
Add the carrots and asparagus to the wok and stir fry for 3 to 4 minutes. These veggies take the longest to cook. Add some salt and pepper.
Next add the onions and the snow peas and stir fry for another 3 to 4 minutes. Add some more salt and pepper to taste.
Finally add the zucchini and stir fry until the veggies are cooked but still nice and crisp.
Add the cooked pasta to the veggies and mix in the grated parmesan. You can add more salt and pepper or parmesan to taste.
Cook for just a minute or 2 and serve immediately. Top with the fresh tomatoes and some grated parmesan.
NOTE: You can add a protein like tofu or sometimes I add Gardein Chick'n Strips. I fry both of these with a little garlic salt and cut into bite size pieces.
NOTE: The recipe lends itself to almost any veggie you have in the fridge. I listed the ones I typically use and like.
