Vegan Red Sauce
This is very simple, but authentic red sauce. You can use it in a number of different recipes as is, or you can use it as a base and add to it.

- 2 Cans Whole San Marzano Tomatoes Don't skimp here
- Olive oil
- 8 to 10 Cloves Garlic -more or less depending on your taste Diced
- 1 to 2 Lg Bunch Fresh basil Chopped
- 2 T Tomato Paste
- 1 to 2 T Organic cane suger or Maple Syrup Just to take the acid down a notch - add more for a sweeter sauce
- Salt and Pepper Keep adding and tasting!
In a pot, add some oil, the garlic and the basil. Slowly cook on med/low heat. Stir frequently so the garlic doesn't burn. The longer you can let this slowly cook the better the flavor. Add the tomato paste and cook for another 2 minutes.
In a large bowl, add the San Marzano tomatoes and using your hands, break apart the tomatoes. Once the garlic and basil are ready, add the tomatoes and stir to mix. Bring to a simmer and let cook for 5 minutes.
Add salt and pepper to taste and the Maple Syrup. Allow your sauce to simmer for another 20 minutes and adjust the seasonings as needed.See Notes Below for other options!
This recipe makes a very simple, fresh red sauce with bold tomato, garlic and basil flavors. You can add other ingredients if you like -
Red Pepper Flakes - adds a little kick to the sauce.
Balsamic Vinegar or Red Wine - adds another layer of flavor.
