- 1 Can Chickpeas
- 2 to 3 Cloves Garlic
- 1/4 Cup Tahini
- 3 T Fresh Lemon Juice
- 1 t Cumin
- 3 or 4 Dashes Hot Sauce
- 1 Sm Jar Roasted Red Peppers Drained
- Salt and Pepper
- 1/4 Cup Olive Oil or you can use veggie stock if you are oil free
Drain the chickpeas, but reserve the liquid. You can add some of the liquid to the hummus to limit the amount of oil needed.
In a food processor, add all the ingredients except the olive oil. Blend for a couple minutes until smooth.
Slowly add some olive oil. If you are using some of the chickpea liquid, you don't need a lot of oil to get the consistency you want.
Taste and add more spices as needed. NOTE - the flavor will build as it sits over time, so be careful
Serve with pretzels, red peppers, carrots or use in a sandwich or wrap.
ENJOY!
