Vegan Seasoned Roasted Smashed Potatoes

Simple, crispy, well seasoned and great with burgers!

Ingredients

  • 12 Sm Red Potatoes
  • Olive oil
  • Dried Basil
  • Dried Thyme
  • Vegan parmesan
  • Sea Salt and Pepper

Instructions

  • Preheat oven to 450 degrees
  • Place the red potatoes in a pot and cover with water (salt the water).  Cook on high until the potatoes are tender.  Remove from water.
  • Place a coating of olive oil on a baking sheet, put the potatoes on the sheet and smash with a potato masher, strong fork or whatever.  Try to maintain some shape to the potatoes.
  • Sprinkle the potatoes with plenty of dried basil, dried thyme leaves, vegan parmesan and salt and pepper.
  • Place the baking sheet in the oven and bake for about 20 minutes or until the potatoes are golden brown and crispy.
  • Remove and serve.  Add additional salt and pepper as needed.
