Vegan Seasoned Roasted Smashed Potatoes
Simple, crispy, well seasoned and great with burgers!

- 12 Sm Red Potatoes
- Olive oil
- Dried Basil
- Dried Thyme
- Vegan parmesan
- Sea Salt and Pepper
Preheat oven to 450 degrees
Place the red potatoes in a pot and cover with water (salt the water). Cook on high until the potatoes are tender. Remove from water.
Place a coating of olive oil on a baking sheet, put the potatoes on the sheet and smash with a potato masher, strong fork or whatever. Try to maintain some shape to the potatoes.
Sprinkle the potatoes with plenty of dried basil, dried thyme leaves, vegan parmesan and salt and pepper.
Place the baking sheet in the oven and bake for about 20 minutes or until the potatoes are golden brown and crispy.
Remove and serve. Add additional salt and pepper as needed.
