Vegan Spinach and Artichoke Dip
This recipe has bold garlic flavor in additon to the spinach and artichokes. Better than any version I have had in a restaurant

- 4 Cups Fresh Spinach Chopped
- 1 Can Artichokes Cut into small pieces
- 6 Cloves Garlic Diced
- 8 oz Vegan Cream Cheese
- 1/4 Cup Vegan Mayo
- 1/4 Cup Vegan Parmesan Grated
- Salt
- Lots of Pepper
Preheat oven to 420 degrees
Add some olive oil to a large fry pan and saute the garlic for a couple minutes. Add the artichoke hearts and some salt and pepper. Saute for a couple minutes.
Add the chopped spinach and cook down until wilted. Try to make sure there isn't a lot of liquid left or your dip will be a little runny. Add a little more pepper.
Stir in the vegan cream cheese, mayo and parmesan. Cook until the cream cheese, mayo and parmesan form a smooth sauce with the spinach.
Place in a sprayed baking dish. Grate a little more vegan parmesan on top and bake for 15 minutes or until the top is golden brown.
Remove from oven and serve with beer bread, tortillas or fresh veggies.
