This is one of those recipes that is easy to pass over - to be honest I do the same thing and I love it. Don't skip this one - you will LOVE IT!

Ingredients
3Red Peppers
2CupsGrape or cherry tomato's
6+TFresh pestoSee recipe
6+ TFresh fetaSee recipe or use Violife brand

Instructions
Make a batch of my fresh pesto. Trust me it's worth it over store bought.
If time permits, make a batch of my fresh feta. I know this takes a lot of time, so when I am in a hurry, I use VioLife Vegan Feta cheese.
Preheat oven to 325 degrees.
Cut the peppers in half, remove the stems and clean the insides.
Place approximately 1/3 cup of chopped cherry or grape tomato's in the pepper, add at least a Tablespoon of pesto and at least one Tablespoon of feta cheese.
Add salt and lots of fresh ground pepper.
Place in a baking dish and bake uncovered for about 30 minutes or until the cheese starts to brown and the pepper is well cooked.
Remove, eat and ENJOY!
Notes
NOTE - This can be used as a main dish or as side. If you use as a main dish you will have some other substantial side to go with it - your favorite potato, another veggie or big, fresh salad.
