Vegan Stuffed Red Peppers with Pesto and Feta

Don’t skip this Vegan Stuffed Red Pepper recipe.  Great as a main dish or as a side.  Great flavors and good for you too!  Use my homemade pesto to raise it to the next level.

Vegan Stuffed Red Peppers with Pesto and Feta

This is one of those recipes that is easy to pass over - to be honest I do the same thing and I love it.  Don't skip this one - you will LOVE IT!

Ingredients

  • 3 Red Peppers
  • 2 Cups Grape or cherry tomato's
  • 6+ T Fresh pesto See recipe
  • 6+ T Fresh feta See recipe or use Violife brand
  • Salt and Pepper

Instructions

  • Make a batch of my fresh pesto.  Trust me it's worth it over store bought.
  • If time permits, make a batch of my fresh feta.   I know this takes a lot of time, so when I am in a hurry, I use VioLife Vegan Feta cheese. 
  • Preheat oven to 325 degrees.
  • Cut the peppers in half, remove the stems and clean the insides.
  • Place approximately 1/3 cup of chopped cherry or grape tomato's in the pepper, add at least a Tablespoon of pesto and at least one Tablespoon of feta cheese.
  • Add salt and lots of fresh ground pepper.
  • Place in a baking dish and bake uncovered for about 30 minutes or until the cheese starts to brown and the pepper is well cooked.
  • Remove, eat and ENJOY!

Notes

NOTE - This can be used as a main dish or as side.  If you use as a main dish you will have some other substantial side to go with it - your favorite potato, another veggie or big, fresh salad.
