Moving On!
Our daughter Taylor is moving to California. Is this a shock……..no. Taylor is quite the dichotomy….she loves her family and family time immensely, without question. She has also developed a passion and drive to move either to Hawaii or California and to give living away a try. We have always encouraged our kids to find their passion, chase their goals and to give it a try. WHAT WERE WE THINKING?
Seriously, we couldn’t be happier for Taylor (California), Abby (Chicago) and Kelsey (Grand Blanc) who are making their own path and doing their own thing. They also remain extremely close to us in every way possible – Technology can be so good – SnapChat, FaceTime, Instagram and of course the antiquated Phone Call! Our family may be a bit spread out right now, but we couldn’t feel more connected.
I forgot to mention!
In addition to moving to California, Taylor and her boyfriend decided to get engaged! As I have said before, I want my daughters to find someone who cherishes them, treats them like they deserve to be treated and that they both feel like they found a great person to spend the rest of their lives with – Check, Check and Check! We couldn’t be happier for both of them.
The actual engagement couldn’t have gone better. All the kids came in from out of town and everybody made sacrifices to make sure we were all together for the big event. While all families have their struggles and challenges, it is so rewarding to see everyone come together when it counts. I guess Kelly and I did something right? No comments from the kids please…….
Change is Good?
We have so much change going on in our family. Kelly and I moved into a new house. Our oldest daughter is getting married in October (on our deck – no pressure to get the remodel completed!), Abby moved to Chicago, Taylor got engaged and is moving to California – Oh Boy!
Now the real question – Who is going to come over now to eat my fantastic vegan meals full of big, bold flavors? I haven’t learned how to scale back my cooking yet, so there will always be tons to eat and I am eager to share. I am still motivated to show people that you can eat healthy foods, that are good for you, good for the environment and good for our animal friends and you don’t have to sacrifice taste AT ALL! To go a step further, I can almost guarantee you that your taste buds will be shocked at the tastes, flavors and overall awesomeness of my vegan dishes. I will put them up against any meat dish and I am confident you will chose mine every time!
Here is a dish I just made over the weekend. Even I was impressed at how great this was. I used a recipe from The Chicago Diner Cookbook and tweeked just a bit – give a try – it may become your favorite pasta dish of all time!
