Vegan Chunky Loaded Guacamole
This is a guacamole that is loaded with more veggies and big, bold flavors.

Ingredients
- 4 Avocados Rough chopped
- 3 or 4 Ears Fresh sweet corn Grilled and cut off cob
- 1/2 Red Onion Diced
- 1 Can Black beans Washed and drained
- 1 Container Cherry or grape tomato's
- 1/4 Cup Cilantro Chopped
- 1 Lime
- 2 t Garlic salt
- 1 t Black pepper
- 1/4 Cup Olive oil
- 1 T Cumin
- 1 T Chili powder
- 1 T Garlic powder
- Salt and Pepper
- A couple shakes of your favorite hot sauce
Instructions
Grilled Sweet Corn
- Heat your grill to med high.
- Remove the husks from the ears of corn.
- Combine the olive oil, cumin, chili powder, garlic powder and some salt and pepper.
- Brush the corn with the olive oil and place on the grill. Grill until the corn has a nice char and grill marks. You can continue to brush with more olive oil while it grills. Remove from grill and set aside to let cool.
- Once the corn has cooled, carefully slice the kernels off the cob.
The Guac
- In a large bowl, add all the ingredients together and mix well. With the lime juice, hot sauce and the garlic salt, add to get the taste to your preference. Remember, the flavors will build over time.
- Cover the guacamole and place in the refrigerator for 30 minutes. Serve and ENJOY!
