These vegan buffalo cauliflower bites pack a mean, big+bold flavor. Spicy, savory and goes perfect with my vegan ranch to cool them down just a touch. Serve them at your next get together. I promise you all your guests will rave about them! ENJOY!
Vegan Buffalo Cauliflower Bites
Ingredients
- 1 Lg Cauliflower head Cut into bite size pieces
The Batter
- 1/3 Cup Almond milk
- 2 t Garlic powder
- 1 t Onion powder
- 1 t Hot Sauce (I use Cholula)
- 1/2 t Salt
- 1/2 t Black pepper
- 1/4 Cup Flour
- 3 T Cornstarch
- 1/2 t Baking Powder
- 1 t Oil
The Buffalo Sauce
- 1 T Vegan Butter
- 3 T Cholula Hot Sauce
- 1 T Maple Syrup
- 1 T White Vinegar
- 1 t Garlic Powder
- 2 Dashes Cayenne Powder Optional
- 1 T Water
- Salt and Pepper
Instructions
- Cut the cauliflower into bite size nuggets. Line a baking dish with parchment paper and preheat your oven to 435 degrees.
- In a large bowl, mix all the batter ingredients together. Once well mixed, add the cauliflower pieces and coat well. Don't let the batter sit too long because it will start to get really thick.
- Place the cauliflower on the parchment paper, spray the tops with some cooking oil and bake for 25 minutes. Try to keep the pieces spread out and not touching each other as best as possible.
- In a small pan, add all the Buffalo sauce ingredients and simmer over medium heat. You aren't really cooking the sauce, you are just getting the butter to melt and the flavors to blend. Once it's well blended, remove from heat.
- Remove the cauliflower from the oven, and add them to the Buffalo sauce. Coat well and place them back on the parchment paper and cook for another 10 minutes or until nice and brown.
- Serve with some vegan ranch and ENJOY!
