More Remodel Talk

We bought a new house and are in the midst of remodeling the inside and making it our own.  I am not a very handy guy by nature, but with the internet, Youtube and some knowledgeable people at the hardware store, I can get by.  In addition to painting every wall, piece of trim and all the doors, we are pulling up carpeting and installing wood floors, removing bulkheads to open up rooms, removing and installing new cabinets and vanities, cutting a hole through a wall to open up a room and create a cool see through to our pond and much more.  It is a full time + type job to get this completed in time for us to move in.  So why am I talking about this on a vegan blog?????

Excuses

One of the many excuses I hear from people is that being a vegan and especially cooking vegan food is too time consuming and expensive.  I will admit, it can take a little more time, but it doesn’t have to.  My wife and I are going sun up to sun down trying to get this home ready.  And yes, I am not currently cooking some of my more elaborate meals, but we are still able to maintain a good, healthy vegan diet.  It takes some planning and prep work, but it can be done.  It is ok to whip up something quick and easy when you’re in a rush.  We give ourselves a break and just say we will eat simple meals or pull something together from what we have and for the next few weeks that will be just fine.

Found a Winner

Last night, my wife and daughter went out for dinner while I worked late at the house.  I had no idea what I was going to have for dinner, but I knew I would figure something out.  I also knew it would have to be quick because I was getting home late and I would be starving.  I made something that will eventually end up on this site as a recipe.  To start, I had some Seitan that I mixed with onions, garlic powder, cumin, Ancho chili powder, smoked paprika, a touch of liquid smoke, Frank’s Red Hot Sauce and some Cholula Hot Sauce.  I fried the Seitan and onions until brown and put it on a tortilla.  I added some vegan cheese, vegan refried beans and made a quesadilla, topped with fresh tomato’s, lettuce, avocado, vegan sour cream and some salsa.  IT WAS SOOOO GOOD!!!!  Winner – Winner – Seitan Quesadilla Dinner!

So, you can do this!  It takes a little planning, discipline and sometimes some quick thinking, but the benefits are well worth it.  Healthy You, Healthy World, Happy Animals!
