No eggs here!

I found one of the hardest things to wrap my head around when I was contemplating going vegan was giving up eggs.  And not just eggs, but all the desserts that are made with eggs – right?  The medical community has also yo-yo’d back and forth about the health benefits of eggs, but one thing I always knew was that it was a good source of protein for a vegetarian so that made them ok to eat.

I also bought in to the marketing campaigns of the egg industry in regards to “Cage Free” and “Free Roaming” equalling chickens that were free and happy – so not true!  There is really no such thing as commercially generated eggs coming from chickens that aren’t raised in far less than ideal and compassionate environments.  Go and ahead and do your own research and you will see.

So we made the transition from vegetarian to vegan and gone were the eggs (and many desserts at first as well).  It was quite easy to cook without eggs, but baking presented a different challenge.  We did research, we tried many different substitutes and alternatives and after some trial and error, you know what we found????  You CAN make wonderful desserts without eggs using egg substitutes.  YES!  We are back to our favorites desserts in a more healthy and compassionate way of making them.
