Soups to warm your soul!

Fall is coming……

Is there anything better than fall?  The air starts to cool, the evenings are perfect for a nice fire on the deck (in a gas fire pit of course), Oktoberfest Beer’s come out, football, the leaves changing, cider and donuts and the perfect time to dust off all your great soup recipes.  There is nothing better on a nice cool night than a bowl of hot soup – especially when you haven’t had it since the end of winter.  Soups are some of my favorite things to make.  Most are pretty simple, yet they deliver the Big+Bold flavors we all want.  They are also super healthy, so full of fresh veggies, beans and herbs.  What more can you ask for, right?

 

 

I typically use a extra large stock pot to make my soups.  I tend to over make things, so I need plenty of room to pile in all the great ingredients.  The BONUS is we have tons of leftovers to eat for the week, and many times I will even freeze some smaller portions for lunches or snacks when we are short on time.  I also like to share what I make, so if I have some extra it is easy to pack up and send to neighbors or friends!

Slow Start!

Now that I am all excited about making soup, I started to pull up some of my recipes.  It’s funny how you can forget about recipes you’ve made many, many times and then when you see them again it brings you right back to how great they taste and how ready you are to eat them again.

Here are a couple soups that are simply too good not to brag about them (I mean share them with you)!

 

Vegan Tortilla Soup

This is my Vegan Tortilla Soup.  It is super easy to make and it delivers a deep, spicy and rich flavor.  It is one of those soups that as you’re making it you wonder – “Am I doing enough to build great flavor”?  And then you taste it and it is better than you imagined.  The soup is full of peppers, onions, tomato’s, garlic, beans and spices.  At the end you blend in some Masa to give it a slightly thicker consistency.  To top it off, add some fresh avocado, red onion and crispy tortilla strips.  I could eat this soup for days – and we DO!  Give it a try and share with me your comments.

 

 

 

 

Vegan Creamy Curry Cauliflower Soup

Another of our favorites is this Vegan Creamy Curry Cauliflower soup – say that 3 times fast.  When I serve this, people are shocked at the creaminess and depth of rich flavor.  They say it’s better than any soup they’ve ever had.  It reminds me more of a bisque than a soup to be honest.  And again, it is SUPER EASY to make.

The red curry paste gives it a level of heat, but the cauliflower adds to nice counterbalance and there is a hint of lemon that brings it all together.  I like to top the soup with some actual roasted cauliflower pieces to give it a little texture as well.  This soup sticks to your ribs and will most certainly warm you up on a nice, cool evening.  Give it a try – you won’t be disappointed!

Ready, Set, Soup….

Well, I know what I will be doing this weekend.  Even though the temps are still a bit on the warm side, the evenings are cooler, so I am going to make a nice pot of soup!  If either of the 2 soups I highlighted aren’t quite your thing, there are more options for you under “Hearty Soups” in my recipe section.  There is a fabulous Vegan Minestrone which had TONS of veggies in a delicious broth, or if you’re on the spicer side, try my Vegan Bean Chili.  This Chili uses dried chilies and takes a little more effort, but it is by far the best chili I’ve ever had – Trust me on that!
