When my wife and I were younger, there were only a few vegetarian restaurants in Grand Rapids. Our favorite was a cool placed called The Gaia House. When the kids were young, we would order take out for us from Gaia and pizza for the kids. They had a great veggie hash, black bean quesadilla and a number of other fantastic dishes, but our favorite was their Mean Green Burrito. OK, our favorite was their Gaia Cookie, but the burrito was a close 2nd. It has been years since they closed and I have finally come “close” to the original. I still give the nod to the Gaia House, but mine isn’t too bad!
Mean Green Burritos
Ingredients
- 16 Tomatillos
- 1 to 2 Med Jalapeno
- 1 Large Onion Chopped
- 6 Cloves Garlic
- Juice of one whole lime
- 1/4 Cup Chopped cilantio
- 1 T Apple cider vinegar
- 2 t Cumin
- 1 T Brown sugar
- 1 t Salt
- 1 t Pepper
- 2 Tomatoes Diced
- 1 Head Iceburg lettuce Chopped
- 8 Medium Flour tortillas
- 2 Cans Refried Black beans No Lard!
- 1 T Chili powder
- 2 t Cumin
- 1 Cup Uncooked brown rice
- 1 Bunch Green onions Chopped
- 1 Cup Homemade vegan sour cream
- 1 Bag Tortilla Chips
Instructions
- Cook the brown rice per directions. I like to add a little cilantro, lime juice and cumin to the rice.
Green Sauce
- Preheat your oven to broil.
- Peel the husks off the tomatillos, cut the onion in quarters, slice the the jalapeno's in half and peel the garlic cloves.
- Lightly oil a cookie sheet and place all the veggies on it and put it in the oven. You want to get a nice char on the veggies, but be careful with the garlic. Once the garlic starts to brown, remove it from the oven. Leave the rest until they are charred and the tomatillo's start to break down.
- In a food processor, add the tomatillo's, onions, garlic, jalapeno, cilantro, lime juice, apple cider vinegar, cumin (1 T), brown sugar, salt and pepper. Blend until fairly smooth.
- Pour the green sauce into the pot, turn on medium and start to simmer for at least 10 minutes.
Refried Black Beans
- Add the refried black beans, chili powder and cumin (2 t) to a pan and warm.
Construct the burritos
- Preheat the oven to 350 degrees.
- In each tortilla, place a scoop of refried black beans, a scoop of brown rice, some chopped tomatoes and lettuce. Wrap and place in a 9 x 13 baking dish sprayed with cooking spray.
- Cover just the tops of the burritos with the green sauce. Save the rest for serving with dinner. Add the chopped green onions to the top of the green sauce.
- Bake uncovered for 20 to 25 minutes minutes or until the onions start to brown slightly.
- Serve with additional green sauce and vegan sour cream.
