Busy, Busy, Busy
This house remodeling is a lot of work! We knew it heading into this project, but it is way more than what we planned for. The good news is that we are at a point where we can start to see some of what the finished product is going to look like and we LOVE it!
For the last 4 weeks, I have been working at the new house until late evening every day. This leads to not a lot of time to prepare and cook meals. So many people comment to me that being vegan is so hard and takes so much time that they just can’t do it. I admit, before the remodel project and without a job, I did have a lot of time to devote to cooking our meals. I was a bit spoiled and so was my family.
BUT, even with our insanely busy schedule, we have been able to maintain a healthy vegan lifestyle. Yes our meals aren’t always as elaborate at times, but that’s ok. Give yourself a break when you need to. We have eaten black bean burgers, tacos, stuffed peppers with pesto and vegan feta, enchiladas, mac and cheez, salads, basic red sauce and pasta to name a few of the quick and easy dishes we threw together. Sometimes I have to stop at the store on the way home to grab a few things because I didn’t prepare well for the week. Again – it’s ok!
Change one person at a time
I said at the beginning that my goal was to share recipes with big, bold flavors that I guarantee you will love. If I could get you to at least try one and maybe even incorporate a vegan meal or two into each week = BIG WIN for both of us! Well, I am proud to say that this is starting to happen. I know of a number of non-vegans who have tried and LOVE some of my recipes and are now eating them each week. Some have kids who also like the food and are part of the transition.
I called this my little passion project and that is all it is – a way for me share what I have learned, how good I feel and how you too can do this! Go ahead – Give something a try. Please post a comment under each recipe you tried so I know how you LOVED it!
