You have to try these Vegan Po’ Boy Sandwiches.  I have recently updated the recipe with some wonderful improvements.  The mushrooms provide a nice, meaty texture and the dry mix adds some great flavor and a bit of heat.  The spicy mayo is a combo of spicy and sweet that compliments the heat from the mushrooms.  The fresh tomato’s and romaine lettuce add the crunch!  I have served these many times and every time our guests just love them.  You have to try these – Trust Me!

Vegan Po' Boy Sandwich

This has all the elements you crave in a great Po Boy sandwich without the meat or seafood - rich, spicy, savory, crisp and "meaty" if you know what I mean.

Ingredients

Spicy Mayo

  • 1 Package Organic Silken Tofu or a combo of vegan mayo and vegan yogurt (about 1/2 cup each)
  • 1.5 T Ground Mustard
  • 1 t Sea Salt
  • 1 t Black Pepper
  • 3 Cloves Garlic Minced
  • 2+ T Diced Sweet Pickles
  • 1 T Prepared Horseradish
  • 1+ T Hot Sauce
  • 2 t Vegan Worcestershire sauce

Dry Mix

  • 1/2 Cup Corn meal
  • 1/2 Cup Panko Breadcrumbs
  • 2 T Garlic Powder
  • 2 t Onion Powder
  • 1 t Smoked Paprika
  • 2 t Old Bay Seasoning
  • 1 t Cajun Seasoning or Slap Ur Mama Seasoning
  • Salt and Pepper

Wet Mix

  • 2 Cups Almond or Soy Milk
  • 1 T Egg Replacer I use Bob's
  • 1 T Apple Cider Vinegar

Sandwich Stuff

  • 16 to 24 Oz Oyster Mushrooms, Shiitake or Lion's Mane Trimmed
  • 6 Dutch Crusty Rolls (or your favorite Hoagie Bun)
  • 1 Tomato Sliced
  • 1 Head Romaine Lettuce Sliced

Instructions

Spicy Mayo

  • Place all the ingredients in a food processor and mix until smooth.

Wet Mix

  • Add the ingredients together and set aside

Dry Mix

  • Add the ingredients together and set aside.

Oyster Mushrooms

  • Wash the mushrooms and trim the ends off.
  • For large oyster mushrooms, cut in half so they are bite sized.
  • Place the mushrooms in the wet mix and let them sit for 20 minutes.

Prepare the Sandwich

  • Place 2 T of olive or coconut oil in a fry pan and turn to med high.
  • Turn the oven on to broil.
  • Coat the mushrooms in the wet mix and in small bunches, place in the dry mix and cover well. Place the mushrooms in the fry pan and fry on each side until crispy and golden brown. Remove from the fry pan and pat with paper towels to remove any extra oil.
  • Slice the hoagies down the middle, but don't cut them in half. Lightly sprinkle with olive oil, a small amount of garlic salt and place in oven. You want to JUST BARELY toast the hoagies so they have a light crunch on the open face.
  • Smear some spicy mayo on both side of the hoagies. Place a layer of mushrooms, tomato and lettuce. You can add more spicy mayo - I did!
  • ENJOY - THESE ARE SO GOOD!
