From the beginning

When we were younger, there were very few vegetarian restaurants in Grand Rapids and zero vegan options.  There was one restaurant that we loved that has since closed.  The Gaia House Cafe was a hip, cool vegetarian restaurant that served awesome food.  We made a habit of going there almost every week.  Many times, because we had 4 young kids, I would go get take out, but eating there gave you the entire experience.  There was always a very diverse cross section of Grand Rapids there and the atmosphere was always welcoming, friendly and very coooool!  Those were good times and a great time if our life.

Sadly, the restaurant closed quite a few years ago.  Since then, I have attempted to replicate some of our favorites – Mean Green Burrito, Veggie Hash and of course, the famous Gaia cookie.  My wife gets credit for the Gaia cookie recipe which I might share with you some day.  While my renditions aren’t exactly like the originals, my family has come to love them just as much.
