Vegan Mexican Grilled Corn on the Cob
Vegan grilled corn that is unlike anything you have ever experienced!

Ingredients
- 6 Ears Fresh sweet corn on the cob
- 1/2 Cup Dairy Free Yogurt
- 1/2 Cup Vegan Mayo
- 1 T Sriracha sauce
- 1 T Ancho chili powder
- 2 t Cumin
- 2 t Garlic Salt
- 1 t Pepper
- 2 Limes
- 1 Bunch Fresh Cilantro
- 1/2 Cup Grated Vegan Parmesan
Instructions
- Shuck and clean the corn. Chop up the cilantro.
- In a bowl, mix together the yogurt, mayo, sriracha, cumin, garlic salt and pepper.
- On a baking sheet, evenly spread out the chopped cilantro and the grated parmesan. Over the top zest the limes. I usually add a little of the lime juice over the cilantro and parm as well.
- Heat your grill to med-high.
- Heavily coat the corn with the sauce and then roll in the cilantro, parm and lime. Place on a plate.
- Place the corn on the grill and grill until nice and golden brown. Serve hot! ENJOY!
