This recipe comes courtesy of my daughter Kelsey. I kicked it up a bit with some additional garlic, red pepper flakes and bacon. It is delicious and so good for you!
Vegan Collard Greens
Ingredients
- 1 Lb Collard Greens Cleaned and chopped
- 4 Cloves Garlic Minced
- 1 Onion Chopped
- 2 T Olive Oil
- 1 or 2 t Red Pepper Flakes How Spicy do you like it?
- 3 Cups Veggie Broth
- 1/2 t Liquid smoke
- 6 Slices Vegan Bacon
- Salt and lots of Pepper
Instructions
- Thoroughly clean the collard greens. If they are not pre-cleaned, they can be very sandy and gritty. There are a lot of techniques on the internet for properly cleaning your greens. Roll the large leaves and chop into strips.
- In a large pot, add the onion and saute until softened. Add the garlic and the red pepper flakes and continue to saute for a few more minutes.
- Add the veggie broth and liquid smoke, mix well and then add your greens.
- Bring the mixture to a boil, reduce heat, cover and simmer for at least 45 minutes. You want the greens nice and tender.
- Fry your bacon strips until nice and crispy. Chop or crumble the bacon into smaller pieces and add to the pot. I typically do this after the greens have begun to simmer, but you can add them anytime in the process.
- Salt and pepper to taste. Serve and ENJOY!
