Vegan Fish Sauce
I searched a lot of different recipes and found the combination of these ingredients were the easiest to find and developed a nice, rich flavor.

Ingredients
- 1 1/2 Cup Water
- 1/4 Cup Soy Sauce
- 3 or 4 Dried Shiitake mushrooms
- 1 Sheet Nori seaweed
- 1/2 Sheet Kombu kelp
- 2 Cloves Garlic Rough chopped
- 1 Small Shallot Rough chopped
- 1 t Tomato paste
- 1 t White miso paste
- Salt and pepper
Instructions
- Add all the ingredients to a pot and bring to a boil. Reduce heat to a simmer, cover and let cook for 30 minutes.
- Strain the broth through cheese cloth (or a coffee filter could work) to get all the loose items out of the broth.
- Store in a covered container in the fridge until ready to use.
