Vegan Green Bean Casserole

Just like you remember, but not out of a can! This will become your all time favorite Thanksgiving side dish. Fresh, savory and filled with great memories.

Ingredients

  • 1 Pound Fresh Green Beans Trimmed and cut
  • 1 T Avocado or olive oil
  • 2 to 3 Medium Shallots Diced small
  • 4 Cloves Garlic Diced small
  • 1 Cup Fresh Mushrooms (Mini-bella or button) Diced small
  • 2 to 3 T Flour
  • 3/4 Cup Veggie Broth
  • 1 Cup Almond or Oat milk
  • Salt and lots of ground pepper
  • 1.5 Cups Fried Onions

Instructions

  • Pre-heat oven to 375 degrees.
  • Fill your medium pot with salted water, bring to a boil and add the cut green beans. Cook for about 5 minutes, but don't overcook. You want the green beans to still have some snap to them. They will continue to cook in the oven later. Drain the beans and run cold water over them.
  • In your fry pan, add the oil, shallots and garlic. Cook over medium heat until the shallots are soft, stirring frequently. Season with salt and pepper. Now add the mushrooms and continue cooking over medium heat until the mushroom just start to brown.
  • Add the flour and stir to mix well with the mushrooms and shallots. Cook for about 2 to 3 minutes.
  • Add the veggie stock and using a whisk, stir well. Bring this mixture so a slight boil. Add salt and pepper as needed.
  • Add the non dairy milk and whisk again. Bring back to a slow boil. Your mixture should start to thicken. It is at this point where you can add more liquid if needed. You want a nice thick mushroom soup consistency.
  • Pour the mushroom sauce over the green beans, add 1 Cup of the fried onions and mix well. Place the mixture into the large baking dish, sprinkle the remaining fried onions on top and place in the oven. Cook covered for about 20 minutes and then remove the top and cook uncovered for another 10 minutes, or until the mixture and nice and bubbly and the onions on top start to brown.
  • Remove from the oven and serve. Enjoy!
