Vegan Mexican Green Rice
Wonderful flavor. Can be used as a side dish or incorporated into a burrito bowl or burrito.

Ingredients
- 3 T Olive oil
- 1 1/2 Cup Brown Rice Uncooked
- 3 Cup Veggie Stock
- 1 1/2 Cup Fresh Spinach Chopped
- 1/2 Cup Cilantro Chopped
- 1 Jalapeno Seeded and chopped
- 1 Shallot Diced
- 3 Cloves Garlic Diced
- Salt and Pepper
Instructions
- Place the spinach, cilantro, jalapeno, shallot, garlic, salt, pepper and 1/2 cup of veggie stock into a food processor. Blend until smooth.
- Add the oil and the brown rice to a pot and cook the brown rice until it starts to sizzle.
- Add the green puree to the brown rice, stir and mix well and cook for 2 minutes.
- Pour in the remaining veggie stock, bring to a boil, reduce to a simmer, cover and cook until tender. Approx. 35 to 40 minutes. Check occasionally to see the liquid level. You can add more veggie stock as needed to get nice tender rice.
Notes
NOTE: This rice is great as a side dish with salsa or as part of a burrito or burrito bowl.
