These Vegan Grilled Portobella Burgers are an over-looked winner in our household.  I have made these for years, and every time I make them we ask ourselves why we don’t make these more often.  The marinated portabella is rich and full of flavor and the avocado mayo adds a layer of freshness along with the veggies.  Easy to make – Big on flavor!  THIS IS A MUST TRY!

Vegan Grilled Portobello Burgers

"Meaty" and full of flavor. This is a great summer burger and best when grilled!

Ingredients

THE Marinade

  • 2 T Olive oil
  • 1/4 Cup Soy Sauce
  • 1/4 Cup Balsamic Vinegar
  • 6 Cloves Garlic Minced
  • 1 T Dijon mustard
  • 1 to 2 T Maple syrup
  • Salt and lots of black pepper

Avocado Mayo

  • 2 Ripe Avocado's
  • 2 T Vegan mayo (I have also used vegan sour cream and/or vegan yogurt - any combo is great)
  • Garlic salt and lots of black pepper

The PORTO Burger

  • 6 Large portobello mushrooms Gills removed and cleaned
  • 1 Tomato Sliced
  • 1 Onion Sliced
  • 1 Bunch Fresh, crisp lettuce
  • 6 Whole wheat buns Toasted on the grill

Instructions

  • Add all the marinade ingredients together and mix well.
  • Place the portobello's either in a 9 x 13 baking dish or a large freezer bag and cover with the marinade. I usually flip the portobello's or shake the bag a few times to make sure both sides are will covered. Leave for about 1 hour.
  • Mash the avocado's and mix with the mayo, garlic salt and pepper. Refrigerate will the portobella's marinate.
  • Once the portobello's are ready, place on a HOT grill. Grill on each side for 3 or 4 minutes. You want nice grill marks on each side, but don't overcook the portobello's.
  • Right at the end of your grilling, place the buns on the grill and get a nice toasting on the cut side.
  • Remove the portobello's and buns from the grill, add the avocado mayo and the fresh veggies and serve - ENJOY!
