This Vegan Roasted Red Pepper Hummus is simply awesome! It starts with a nice, traditional hummus and it gets amped up with the roasted red peppers and the spices. The overall flavor is still very much in line with a traditional hummus, just better!
This Vegan Roasted Red Pepper Hummus is quick and simple to make and it is extremely versatile. It is perfect as a dip with fresh veggies, pretzels or pita squares or it can be used in sandwiches or wraps.

Vegan Roasted Red Pepper Hummus
Ingredients
- 1 Can Chickpeas
- 2 to 3 Cloves Garlic
- 1/4 Cup Tahini
- 3 T Fresh Lemon Juice
- 1 t Cumin
- 3 or 4 Dashes Hot Sauce
- 1 Sm Jar Roasted Red Peppers Drained
- Salt and Pepper
- 1/4 Cup Olive Oil or you can use veggie stock if you are oil free
Instructions
- Drain the chickpeas, but reserve the liquid. You can add some of the liquid to the hummus to limit the amount of oil needed.
- In a food processor, add all the ingredients except the olive oil. Blend for a couple minutes until smooth.
- Slowly add some olive oil. If you are using some of the chickpea liquid, you don't need a lot of oil to get the consistency you want.
- Taste and add more spices as needed. NOTE – the flavor will build as it sits over time, so be careful
- Serve with pretzels, red peppers, carrots or use in a sandwich or wrap.
- ENJOY!
