This Vegan Roasted Red Pepper Hummus is simply awesome! It starts with a nice, traditional hummus and it gets amped up with the roasted red peppers and the spices. The overall flavor is still very much in line with a traditional hummus, just better!

This Vegan Roasted Red Pepper Hummus is quick and simple to make and it is extremely versatile. It is perfect as a dip with fresh veggies, pretzels or pita squares or it can be used in sandwiches or wraps.

Vegan Roasted Red Pepper Hummus

This Vegan Roasted Red Pepper Hummus is so darn good. Great traditional hummus flavor, amped up with some roasted red peppers!

Ingredients

  • 1 Can Chickpeas
  • 2 to 3 Cloves Garlic
  • 1/4 Cup Tahini
  • 3 T Fresh Lemon Juice
  • 1 t Cumin
  • 3 or 4 Dashes Hot Sauce
  • 1 Sm Jar Roasted Red Peppers Drained
  • Salt and Pepper
  • 1/4 Cup Olive Oil or you can use veggie stock if you are oil free

Instructions

  • Drain the chickpeas, but reserve the liquid. You can add some of the liquid to the hummus to limit the amount of oil needed.
  • In a food processor, add all the ingredients except the olive oil. Blend for a couple minutes until smooth.
  • Slowly add some olive oil. If you are using some of the chickpea liquid, you don't need a lot of oil to get the consistency you want.
  • Taste and add more spices as needed. NOTE – the flavor will build as it sits over time, so be careful
  • Serve with pretzels, red peppers, carrots or use in a sandwich or wrap.
