These vegan Sloppy Joe’s are simply the best we’ve ever had – PERIOD! They are so good we tend to eat them about 3 nights in a row – we just can’t get enough. The flavors is spot on – rich, smokey, slightly sweet and the textures are perfect. You can add just about anything as a topping and we like to change it up over the 3 nights! To switch it up, you can use this as a topping over a baked potato!
This recipe is the perfect thing to make for a large group, gathering or family event. Everyone loves sloppy joe’s and my guess is nobody will suspect they are made with lentils.
Slop, Slop Sloppy Joe's
Ingredients
- 1/2 Medium Onion Diced
- 1/2 Medium Green Pepper Diced
- 1/2 Medium Red Pepper Diced
- 3 Cloves Garlic Minced
- 1 Cup Uncooked green lentils
- 2 1/2 Cups Veggie Broth
- 1 15 oz can Tomato sauce
- 1 1/2 T Tomato paste
- 1/4 t Cayenne pepper
- 2 t Dry Mustard
- 2 T Vegan Worcestershire sauce
- 2 T Soy Sauce
- 1 T Apple cider vinegar
- 1 T Brown sugar
- 1/2 t Smoked Paprika
- 1/2 t Liquid Smoke
- Salt and Pepper
- Extra water as needed
Instructions
- Add the uncooked lentils to the veggie broth in a pot. Bring to boil, reduce heat to a simmer and cover. Cook until the lentils are very soft. This could take 30 to 40 minutes. Stir occasionally and add some more water as needed.
- In a pot, saute the onion, peppers and garlic until very soft and just starting to brown.
- Add the tomato sauce and tomato paste to the veggies and stir to combine. Cook for 2 minutes.
- Add all the other ingredients to the veggies and stir to combine. Cook for 2 minutes.
- Once the lentils are good and soft, add to the veggies. It is ok if there is a little liquid left in the lentils, but not too much. Drain off any excess so your sloppy joe's are TOO sloppy!
- Simmer for about 20 minutes. You can adjust to your taste....more tang add some more cider vinegar, more sweetness add more brown sugar or for more smokiness add more liquid smoke BUT be careful - a little liquid smoke goes a LONG way!

NOTES
- I have been adding some ketchup and molasses to this recipe. Totally optional, but I think it adds a deeper flavor and so far everyone says these are the best sloppy joe’s yet (I don’t tell them I added this stuff).
- Try adding mustard as a condiment – yellow or dijon. Makes for a nice change!
