Vegan Spicy Broccoli

Great change of pace from typical broccoli recipes.  You could also grill this recipe in the summer!

Ingredients

  • 1 Lg Broccoli head Cut into large pieces
  • 1/4 Cup Olive oil
  • 1/4 Cup Soy Sauce
  • 2 T Ground fresh chili paste
  • 1 or 2 T Maple syrup More or less based on your taste
  • 1 Pinch Salt and Pepper
  • 1 or 2 Splash Lemon or lime juice Just a kick of acid

Instructions

  • Preheat oven to 425.
  • Cut the broccoli into large pieces. 
  • Mix together the olive oil, soy sauce, chili paste, maple syrup, salt, pepper and lemon or lime juice.  Whisk it!
  • Place a layer of tin foil over a cookie sheet and spray with vegetable spray.  Lay out the broccoli on the cookie sheet and brush the broccoli generously with the sauce.  Save some to add when served.
  • Baked for about 10 minutes or just until the broccoli just starts to brown but still has a crunch.  Remove from oven, drizzle with remaining sauce and serve.

Notes

NOTE:  This is a great side dish for a burger or sloppy joe night!
