This Vegan Spinach and Artichoke Dip is better than any you have ever had before. This recipe is so good, it gets requested for every family casual get together. I get tired of making it, but not eating it!
Vegan Spinach and Artichoke Dip
Ingredients
- 4 Cups Fresh Spinach Chopped
- 1 Can Artichokes Cut into small pieces
- 6 Cloves Garlic Diced
- 8 oz Vegan Cream Cheese
- 1/4 Cup Vegan Mayo
- 1/4 Cup Vegan Parmesan Grated
- Salt
- Lots of Pepper
Instructions
- Preheat oven to 420 degrees
- Add some olive oil to a large fry pan and saute the garlic for a couple minutes. Add the artichoke hearts and some salt and pepper. Saute for a couple minutes.
- Add the chopped spinach and cook down until wilted. Try to make sure there isn’t a lot of liquid left or your dip will be a little runny. Add a little more pepper.
- Stir in the vegan cream cheese, mayo and parmesan. Cook until the cream cheese, mayo and parmesan form a smooth sauce with the spinach.
- Place in a sprayed baking dish. Grate a little more vegan parmesan on top and bake for 15 minutes or until the top is golden brown.
- Remove from oven and serve with beer bread, tortillas or fresh veggies.
