Don’t skip this Vegan Stuffed Red Pepper recipe. Great as a main dish or as a side. Great flavors and good for you too! Use my homemade pesto to raise it to the next level.
Vegan Stuffed Red Peppers with Pesto and Feta
Ingredients
- 3 Red Peppers
- 2 Cups Grape or cherry tomato's
- 6+ T Fresh pesto See recipe
- 6+ T Fresh feta See recipe or use Violife brand
- Salt and Pepper
Instructions
- Make a batch of my fresh pesto. Trust me it's worth it over store bought.
- If time permits, make a batch of my fresh feta. I know this takes a lot of time, so when I am in a hurry, I use VioLife Vegan Feta cheese.
- Preheat oven to 325 degrees.
- Cut the peppers in half, remove the stems and clean the insides.
- Place approximately 1/3 cup of chopped cherry or grape tomato's in the pepper, add at least a Tablespoon of pesto and at least one Tablespoon of feta cheese.
- Add salt and lots of fresh ground pepper.
- Place in a baking dish and bake uncovered for about 30 minutes or until the cheese starts to brown and the pepper is well cooked.
- Remove, eat and ENJOY!
