This salad is simply Amazing – that’s why it’s called the Vegan Amazing Salad.  Super easy to make.  Great contrast of fresh, tangy, sweet and salty.  It is almost impossible to eat just one serving and you may even decide to make this your meal.  Try it – You will LOVE IT!

Your New Favorite Salad

This will become your favorite salad – Trust Me! Tangy balsamic vinaigrette enhances this fresh salad of greens, red onion, apples, cranberries and pistachios.

Ingredients

Balsamic Vinaigrette

  • 1/3 Cup Olive Oil
  • 1/4 Cup Balsamic Vinegar
  • 2 t Dijon Mustard
  • 2 Cloves Garlic Dices
  • 1 T Maple Syrup
  • Salt and Pepper

The SALAD

  • 1 Bunch Romaine Lettuce Cleaned and Chopped
  • 1 Bunch Green Leaf Lettuce Cleaned and Chopped
  • 1 Small Red Onion Diced
  • 1 Apple – we use Honeycrisp Chopped
  • Dried Cranberries
  • Roasted, Shelled and Salted Pistachios

Instructions

Balsamic Vinaigrette

  • In a container with a cover, add all the ingredients. Mix well and set aside. For best results, place it in the refrigerator for at least one hour.

The SALAD

  • In a salad bowl, fill with 1/2 Romaine and 1/2 Green Leaf. Mix together.
  • Add a couple spoonful's of the diced red onion, a small handful of chopped apples, dried cranberries and pistachios.
  • Dress the salad with a decent amount of balsamic vinaigrette and some fresh ground pepper.
  • ENJOY!
